We planted purple eggplant in our garden this year. It was our first time, actually. A friend of mine blessed me with 4 eggplant starts and I figured, “why not?” The eggplants took over. Seriously. There was no more room to run, or to hide. I had made all the eggplant recipes I could find on the internet and stir fried the rest until I couldn’t gag anymore down.
What else could I do, except learn how to preserve it for later? Did you know there were at least 4 ways to preserve eggplant? Really!
