It’s very rare that I get to have lunch at home. I am bouncing around from school to school, meeting with the first- and second-year teachers that I mentor, and often times simply pack a lunch that I can eat in the car or in whatever teacher’s lounge I am nearest to.
One day in late February, the stars aligned. I was able to go home for lunch, and you can bet there was no way I was eating a cold lunch. I wanted something hot. Something hearty. Something that would taste of summer. (February in Iowa, anyone?!)
