Except for on the weekends, breakfast can be a challenge at our house. I’d be content with a bowl of cold cereal and/ or a piece of toast smothered in cream cheese and jam; the hubby, not so much. I know he wouldn’t mind if I got up with him and made him scrambled eggs with the works every morning, but not only would I have to get up earlier, so would he, just to have time to eat it. My mission at the grocery store today was to find, in his words, “grab and go breakfast stuff”, along with a list of “do not likes”. He suggested some granola bars, but I’m not too keen on that idea. Granola bars have for some time, been giving the impression of being “health food”, but if you actually look at the ingredients, they’re not so healthy. High-fructose corn syrup, more sugar, chemicals… no thanks. So while strolling the aisles of the grocery store, the idea of making my own came to me.
