I believe that animal butchery is an art. It takes practice and skill to become efficient and good at it. We are working towards that but are by no means there yet. We prepared ourselves for the process by reading and watching lots of videos. We have found the Farmstead Meatsmith to be the most proficient and eloquent butcher in our opinion. He butchers pigs with elegance if such a thing can be done.
