A couple weeks ago, the hubby and I both bought a 10 pound bag of carrots, unknowing the other had also bought carrots. We ate and ate and ate carrots with almost every meal, until carrots were no longer all that appetizing. So with 10 pounds of carrots still remaining and being in the homesteading frame of mind, we decided to can them.
My husband’s grandmother was from Denmark and brought many of her Danish traditions with her when she came to America at the tender age of 18. One of those was red cabbage at Christmas. The hubby decided he wanted to keep that tradition alive this year and decided to make his own. It’s delicious! He did a “test run” on the recipe for Thanksgiving. It was a big hit with my family, but there was sooooooo much food at Thanksgiving dinner, we ended up with lots of leftovers and figured canning them was the best way to preserve them. So we turned again to Ball’s book of wonders.
