Sometimes it’s just not worth the time to drag out the waterbath canner for a few jars of pickles. Refrigerator pickles are perfect for small batches, and they will retain their crispness better than canned pickles, too. The same basic recipe can also be adjusted for fermenting or canning in larger batches when your cucumber plants are overflowing with cukes!
