
A Classic Southern Recipe for Sweet Potato Pie.
Sweet Potato Pie, while being a classic in most Southern households is new to me. My Mama didn’t make it when I was a kid, and I’ve never made it before. Until now. I thought I didn’t like sweet potatoes. I usually force myself to consume a fork-full at Thanksgiving and that’s it. While searching for foods that stored well over the winter, though, I kept coming across them. My folks grow and store them now, and eat them regularly, and this past May, their sweet potatoes still looked like they had just recenty been dug out of the ground, surviving months in storage. Because my potatoes haven’t been storing as well for as long as I would like for them to, I begged for some sweet potatoes from my folks to try a few recipes and see if the family would eat them. First up: Sweet Potato Pie.
This pie is quick, simple, and easy, as I think all pies should be. You start with a cooked sweet potato, butter, some sugar, milk, eggs, vanilla, nutmeg and cinnamon.
