This is one of my favorite dishes. It incorporates a variety of colors. I was taught there should be at least three colors on the plate to have a healthy meal. Do they still teach things like that? It’s also made in just one pan which makes clean up much easier. Take a look and see how easy it goes together, then feed your family a wonderful nutritious meal.

We live about 25 miles from the closest grocery store in the beautiful mountains of Oregon.
