Rhubarb pie might not be as photogenic as apple pie, but in combination with toasted walnut crust and homemade vanilla ice cream, it is Mr. Locust Blossom’s favorite. (Recipe and gluten free option provided.) Also, if you have never seen a rhubarb plant go to seed, take a look. It’s simply stunning.

We live about 25 miles from the closest grocery store in the beautiful mountains of Oregon. We strive to provided a good majority of our food for ourselves &/or find it locally while at the same time eating what we consider to be the healthiest diet and creating as little refuse/garbage as possible (down to about 6 bags per year.)
