Yesterday I decided to try rabbit in the All American Sun Oven and the results were amazing!
I had a 3 – 3.5 lbs young rabbit to roast and started with a simple, but delicious, marinade.
6 tablespoons of olive oil
Juice from 2 lemons
3 – 4 Fresh Rosemary Sprigs (removed from stem)
4 Cloves of Minced Garlic
1 Large (or 2 small) Minced Shallot
Freshly Ground Pepper & Sea Salt to taste
