Gingerbread is wonderfully moist, spicy, and smells amazing as it bakes. These muffins have the added bonus of a hidden cinnamon cream cheese flavored swirl hidden inside. I like to bake them up for special morning breakfasts and sometimes just because! They’re great with a cup of tea and store well.
