Kransekage is a Danish and Norwegian (kransekake) tradition for special occasions like weddings and baptisms and Christmas and New Year’s Eve. The rings are traditionally made of rings of marzipan cake and stacked with ice icing. For my modern version, I decided to use a “healthy” sugar cookie.
Every holiday at my house is celebrated with an array of yummy sugar cookies decorated for the season. Whether it is Halloween, Thanksgiving, Christmas or Valentine’s Day my grandchildren know the cookie jar will be filled with these colorful treats.
